American Sabor told the story of the profound influence and impact of Latinos in American popular music.

This exhibition explored the contributions of Latinos in American popular music by highlighting five major centers of Latino popular music: New York City, Los Angeles, Miami, San Antonio, and San Francisco. Over 100 artifacts, instrument interactives, a dance floor, and media pieces helped visitors explore the Latino experience to gain a new outlook on American popular music.

Additional artifacts highlighting the role of Latino music in Texas were added so visitors could experience the contributions of  a greater number of Texas artists, including Lydia Mendoza, Isidro Lopez, Little Joe Hernandez, Laura Canales, Freddy Fender, Steve Jordan, Flaco Jimenez, and Sunny and the Sunliners. More modern Latino artists like Los Lonely Boys, Grupo Fantasma, and Girl in a Coma were also featured to explore the contemporary impact of Latino music.
